This one carries a very different energy than your typical production Gyuto. Built through a collaboration between Nigara Hamono and Hatsukokoro, the Yorokobi 240mm was clearly designed with collectors in mind first — low production, high finishing detail, and the kind of blade that instantly stands out once it’s in hand.

Forged entirely in Japan, the knife uses SLD semi-stainless steel at its core — a steel that has quietly built a strong reputation among enthusiasts for good reason. It keeps an edge exceptionally long, offers better toughness than many ultra-hard carbons, and brings a more relaxed maintenance experience without losing that crisp Japanese cutting feel people chase.

Visually, the blade balances aggression and refinement at the same time. The lower bevel carries a muted stone-like texture, while the upper section transitions into darker forged tones layered over exposed Damascus patterns that shift depending on the lighting. It’s not loud or flashy in an artificial way — more the kind of finish that reveals itself slowly the more you look at it.

At 240mm, the Gyuto profile gives the knife real presence on the board. Longer slicing strokes feel effortless, larger prep becomes smoother, and proteins especially are where this size starts to shine. Even with the added length, the blade remains surprisingly nimble thanks to the grind and taper, keeping the edge thin and responsive through detailed work.

This is the type of piece that sits in that difficult middle ground: undeniably expensive, but also difficult to argue against once you see the level of work behind it. Between the collaboration itself, the finishing complexity, and the limited nature of these blades, it lands far more in collector territory than everyday production knife — while still being fully built to perform in a serious kitchen.

Kakushin can handle the blade-to-handle assembly for you at our shop. If you're new to the custom knife world and want to confirm the fit and sizing of a handle with a specific blade, feel free to reach out!
